The Estate
The Estate is a reimagining of key spaces at Drayton’s Winery in Pokolbin, transforming the existing site into a cohesive and layered destination. The project brings together a series of new and renewed experiences, including a restaurant, outdoor courtyard with café, and a dedicated wedding venue, repositioning the winery as a place for gathering, dining and celebration.
Rather than a singular intervention, the design works as a collection of connected moments - balancing indoor and outdoor spaces to create a relaxed and immersive visitor experience. A new courtyard forms the social heart of the estate, while the restaurant and event spaces extend outward, engaging with the surrounding landscape and vineyard setting.
Materially, the project draws on a warm and grounded palette, with timber, steel and soft planting used to create a sense of continuity across the site. The result is a contemporary reinterpretation of the winery - one that feels both familiar and renewed, and designed to evolve with the life of the estate.
